English aromatic variety
The russeted, marked skin of this apple belies the wonder of its contents. This blushed, golden apple packs a wallop of flavor in its dense flesh.
Bold acidity comes with balanced sweetness, and an aromatic register carrying flavors from the four corners of the earth—lychee, mango, passionfruit, kiwi, persimmon, chestnut and pineapple.

Specialty cider variety
Naturally red on the inside of the fruit, RedWave™ apples yield a bright red cider full of berry and red-fruit flavors (hinting at watermelon, rhubarb, cranberry, strawberry or raspberry).
The color in these apples is completely natural. Descended from wild apples growing in Central Asia, they have been domesticated for commercial production. Now grown in Central Washington state, they grow reliably to good size, producing copious flavor and colorful juice.

English bittersweet variety
An English cider variety, Bulmer’s Norman is great bittersweet. Its rich tannin content produces a full-bodied cider with balanced mouthfeel. Medium astringency and bitterness work together to produce a classic english flavor profile.
With very low acidity, it works well when blended with higher-acid, aromatic varieties.

American aromatic variety
This American classic variety is great for cider with its distinctive aromatic profile. As it ripens, its flavor and color continue to develop, while acidity drops.
Its thick skin ranges from deep red to black, and fully-ripened apples are capable of producing vanilla, spice, cherry and honey tones.

Dessert pear variety
This classic, crisp green pear many are familiar with for eating and baking also makes a smooth, light perry. Widely available in the Pacific Northwest, D’Anjou is capable of producing a very affordable perry.

English bittersweet variety
Ideal for cider, Dabinett’s clear tannin provides color and structure, while mild aromatics round out the profile, making it a good single-varietal producer.
Its tannin character is structural, providing astringency and a mild sensation similar to grapefruit. This can develop into mild wood, spice and smoke aromatics at times.
Its low acidity plays well in a true English-style dry cider.

A medium bittersweet, Ellis Bitter is a good-sized cider variety that ripens early with medium tannin and high sugar content. This produces a classic English-style cider with soft astringency and bitterness.

American aromatic variety
Golden Russet is delicious – packed with complex flavor and noticeable sugar and acid, it’s a great eating apple. In cider it shines as well, producing a bright, full-bodied cider rich in tropical and summer fruit flavors (such as citrus, pineapple, mango, lychee).
It makes a great balanced cider that can stand well on its own as a single varietal. Its aromatic complexity also makes it a good component of a blend, bringing character to round out “flatter” ciders.

English variety
Hailing back to 1600s, Herefordshire Redstreak was highly renowned as an exemplary cider variety, and its ciders fetched prices competitive with fine wines during the peak of its popularity.
Sometimes classed as a bittersweet, sometimes as a bittersharp, it has enough balance to make a great single varietal cider.

English bittersweet variety
A potent bittersweet, Chisel Jersey is loaded with tannin and sugar, producing an exceptionally structured cider with distinct astringency and very little acid.
Its green skin finishes the season with red stripes and, in the Central Washington climate, develops a rich red blush in the hot late-summer sunlight.
Chisel Jersey’s strong tannin make it an excellent variety for a traditional bittersweet cider. As a component in a blend, it rounds out the mouthfeel to bring complexity to the finished cider.
